I went a little grilled cheese/panini crazy this weekend. I just felt like eating cheese. I found two different recipes on Pinterest that sounded interesting. One was the one I’m about to share, and the other one involved black olive tapenade, sundried tomatoes, and mozzarella cheese. I changed both of them to fit what I’d prefer. For instance, the original recipe that I got this idea from used pound cake instead of bread. I know I’ve been on an all-you-can-eat kick lately, but even I have my limits when it comes to splurging, lol. I guess you can substitute pound cake in place of regular bread if you are so inclined. I’m sure it tastes delish…
Ingredients:
- Bread
- Fig spread
- Brie Cheese
- Butter
- Olive Oil
- Frying pan
Instructions:
1. Butter one side of the bread and put slices of brie cheese over it. Apply the fig spread to the other piece of bread.
2. Heat up the frying pan with the olive oil and place the bread with the cheese in it.
3. Add the slice of bread with the fig on top of it.
4. Flip each side until both are golden brown and you can see the cheese has melted.
I liked this sandwich, but I don’t know if I liked it enough to make it again. I wanted to make it because my aunt always has brie & fig out as a spread for holidays that she hosts at her house and I always love it. It may be a little much for me to eat it in a grilled-cheese fashion. It was very sweet. I’m prefer salty over sweet, but if you’re into sweet things, then you’ll like it. It reminded me of when eating a pasty meets eating a sandwich, haha. But it’s easy to make!
